When heading out camping, especially when you’ll be in one spot for a few days, it’s very tempting to want to cook really nice meals with high-quality ingredients, but the downside can be lugging a lot of food, coolers, equipment, etc. along with you. Sometimes you just want to carry as little as possible and still eat well.
I recently had a chance to head out for a few days to enjoy some solace, and managed two easy meals that were filling, delicious, and CHEAP! I even got compliments from other campers who either dined with me or sampled what I had cooked.
Let me answer a few questions about this meal before you ask them:
- Yes, that is spam
- Yes, my coals were a bit too hot
- Yes, I am eating off of a flying disc toy
This was a terrific lunch. Teriyaki glazed spam (or the ALDI® equivalent) and grilled pineapple, served on Hawaiian rolls. Total cost for this meal was probably $6 and could have easily fed 4, but instead fed 2 very hungry individuals dealing with the heat!
This dinner came in around $5. Boxed mac-and-cheese (not the powder-type), a can of smoked oysters, and a healthy dose of hot sauce. I could have eaten the whole pot myself, but I’m not THAT much of a glutton :)
Two simple, cheap meals, definitely back on the rotation for future camping.
