Buckwheat Belgian Waffles

Serving: 6 large waffles, Preparation time: 15 minutes, Cooking time: 5 minutes,
What we need: waffle iron, mixer


  • 2 cups buckwheat flour
  • 4 tsp baking powder
  • 1 tbsp granulated sugar
  • ¼ tsp salt
  • 1 tsp cinnamon
  • 2 large eggs, separated
  • ⅓ cup coconut oil, melted
  • 1⅓ cup milk
  • ½ tsp pure vanilla extract

Let me start off by saying that I LOVE BUCKWHEAT WAFFLES! There's something about the heartiness, especially on a cold autumn or winter morning, that makes these the perfect breakfast alongside bacon/sausage/scrapple/spam, slathered in butter and real maple syrup.

This recipe has become a staple for me. It takes almost no time to make (I actually put together the dry ingredients beforehand so that I can make them quicker). The only part I am still learning to do properly (and have almost mastered) is the beating of the egg whites. Beyond that, the yummy factor on this recipe is very high.


  1. Prepare waffle iron with natural cooking spray and turn it on to warm it. (As you continue to make all of the waffles, be sure to spray the waffle iron each time with cooking spray. These waffles will stick, if you don't.)
  2. Very carefully separate egg yolk and white. It is important to try to keep all of the yolk out of your whites. Set egg whites aside.
  3. Use a mixer to beat all ingredients (including yolks) together, except egg whites. Transfer mixture to a large bowl {unless you have more than one mixer}. Clean mixing bowl and beaters.
  4. Beat egg whites at a high speed for about 4 minutes and until soft peaks have formed.
  5. Stir egg whites into the waffle batter.
  6. Use a ½ cup measuring cup to spoon mixture out and onto waffle maker. {This amount may vary depending on the size of your waffle maker. I have a standard size Belgian waffle maker.}
  7. You can heat your oven to 200 degrees F. to keep waffles warm, if needed

NOTES These waffles store well in the freezer. Reheat them in the oven at 350 degrees F. for a couple of minutes.
